This morning before church I put a meatloaf and potatoes in the crock pot. Wooten requested a meatloaf the other day. I searched online and found this recipe:
This morning before church I put a meatloaf and potatoes in the crock pot. Wooten requested a meatloaf the other day. I searched online and found this recipe:
2 lbs. ground beef (I used a little more)
1/2 cup chopped onion
1 cup cracker crumbs (I also used a cup of Italian bread crumbs)
8 oz. tomato sauce
Small potatoes, cut up (leave skins on, so the potatoes don't turn dark)
1/2 cup chopped green pepper (I didn't have one so I omitted this)
1 1/2 teaspoon salt
1 egg
1 cup milk
Mix all ingredients except potatoes. Shape into a loaf. Place in crock pot. Place potatoes around the sides. Cook on High for 4-6 hours.
When we got home from church it smelled wonderful. I cooked up some green beans and heated up some bread with butter and we were ready to chow down. It was a hit and oh so simple.
Anna Gracen wants to make a pineapple casserole and some sweet potato french fries to go along with the left over meatloaf for supper. She got the idea about the pineapple casserole from Nana who made several this weekend for a dinner. She got the idea about the sweet potato french fries from Wooten. He had some at Aunt Vicky's house and loved them! We better get to cooking!
All this sounds so good and healthy!!! I love that the kids have so much input...one day we may see them on the cooking network with their own show! Thanks for the recipes!

Thanks for the sweet potatos that you gave us. We too made french fries out of them and they were delish! The thinner you slice them the better they are (so say the kids) Enjoy!
